Great grapes, much like great people, are bred for resilience against the elements
This Pet Nat (short for Pétillant Naturel, a French word meaning natural bubbles) is a testament to why winemakers should let native grapes do their own thing. Osmote has left these wines hazy via ‘unfined and unfiltered,’ leaving some sediment at the bottom and creating a true expression of New York state terroir. This wine shines with lightning-acidity but balanced with white peaches, and a Pixie Stick sweet/sour key lime quality. Ben Riccardi turned the flavors up to 11 with this one and it’s versatile: blend for brunch, a mixology topper, or just on its own.
