This co-ferment of 93% Syrah and 7% Viognier gives you whiffs of violets, hibiscus, and rosemary along with a palate loaded with blackberries and black plums. The sensory lift in this wine is a pleasure due to the aromatics of the Viognier and a small percentage of stem inclusion. After the initial tastes of fruit, you will find layers of bacon fat, olive tapenade, and black pepper to go along with the restrained use of new French oak, softening the well-structured tannins in the mouth. Northern Rhone influenced wines such as this are a unique combination of contemplation and culinary possibilities.
It's just screaming for herb crusted lamb chops followed by a rousing rendition of "From Her to Eternity" by Nick Cave and the Bad Seeds.
